As part of my
alternative healing process, my diet now consists mostly of cooked vegetables. Since roasted veggies can get pretty boring after awhile, I've been mixing up things up a bit.
My most recent obsession is stir fried baby bok choy and mushrooms with fresh ginger, garlic and jalapenos. It's fresh, spicy and salty all at once. Yum.

DeleteOh, yum. I eat a lot of vegetables myself -- and have made a very similar dish -- and yet didn't think of adding ginger! How could I forget the ginger???

DeleteI used to love creamy salad dressings. For years I only used Parmesan Peppercorn but in there past year I have fallen in love with a little drizzle of red wine vinegar and olive oil with a sprinkle of salt and pepper

DeleteWell, right now it's bok choy and mushrooms because IT LOOKS SO GOOD THAT I NEED SOME RIGHT NOW, that's why. But until I looked at the photo, I've been quite enchanted with greens (raw or cooked with a bit of olive oil and garlic), especially spinach, chard, and kale blended. And my other obsession is brown rice cooked in light coconut milk instead of water. Try it, you'll like it!

ReplyDeleteI love ginger! In any form :) I make a fresh and healthy brew every morning out of thin slices of peeled ginger root and a slice of rinsed organic lemon. A good alternative tea that picks me up!
